I did not! I grew up in a combination of Maine and Connecticut, and wound up finding my way to Boston for college and have been here ever since. While I was studying, I found a passion for the beverage industry and started trying to learn as much as I could about wine, spirits and beer. I got hooked on the never ending depth of information, history and culture that surrounded everything about it and never looked back. Also having a passion for cooking and all things food, when Eataly was opening in Boston in 2016 I immediately applied for a management position in our wine store. Almost 9 years later, I’ve worked in just about every avenue for Eataly from Beverage to Retail to Finance. But always tied in some way to wine and food.
A nearly impossible question to answer! But right now I’m loving the “PEA – CE”, a snow pea infused tequila cocktail upstairs at Terra made with Centum Herbis and lime juice. It’s the perfect blend of fresh summery flavor with a slightly bitter backbone. Also, on our Patio out on Boylston St. we have a cocktail called “A Domani” made with Averna, Fino Sherry, lime and splash of club soda – a great combination of bitter, salty but still easy drinking. Great on one of those 90+ degree days.
But to be honest with you, I love going into our wine shop and grabbing a bottle of wine or some of these amazing Italian spirits to make some cocktails at the house!
My Favorite thing to pair with the snow pea cocktail up in Terra would have to be either the Polpo Carpaccio (octopus carpaccio) or our Crudo di Pesce. The light fresh flavors of the cocktail really make these dishes stand out for a great Summer pairing.
Aperol is an Italian aperitif, a bitter liquor made from oranges, cinchona bark, gentian root, rhubarb and a bunch of other ingredients. The main flavor profile is citrus with the gentian and cinchona giving it it’s signature bitter backbone. Most commonly found in an Aperol Spritz, the cocktail is meant to be drunk at aperitivo to start getting your appetite ready before dinner.
There isn’t a whole lot of debate here, and the recipe is quite simple and easy to remember. The easiest way to remember is to just say 3, 2, 1.
3 parts Prosecco
2 parts Aperol
1 part club soda
Obviously everyone has their own preferences. I prefer bitter cocktails and might lean a little heavier into my serving of Aperol. Someone I know much prefers to go heavier on the prosecco (even if she’s wrong). That being said, the Spritz doesn’t have to end there. There are dozens of aperitivo liqueurs that could be subbed out in place of Aperol. For instance, I love a Campari spritz – definitely a little more bitter and not as much sugar as its Aperol counterpart.
